The Tastery Recipes: The Gilded Rose Spritzer (Mocktail)

This refreshing mocktail, The Gilded Rose, features a homemade strawberry shrub layered with sparkling water and elderflower rose lemonade for a drink that is light, sweet, tart, and perfect for warm-weather gatherings.
For those unfamiliar, a shrub is a drinking vinegar made from fruit, sugar, and vinegar. It creates a bright, tangy syrup that can be used in cocktails, mocktails, and other beverages. The vinegar also acts as a natural preservative while adding depth and complexity to the drink.
Strawberry Shrub Recipe
This recipe uses the cold-process method.
Ingredients
- 1 part fresh strawberries
- 1 part prosecco vinegar
- 1 part turbinado sugar
Instructions
- Combine the strawberries and sugar in equal parts by weight.
- Stir well, cover, and refrigerate for 24 to 48 hours. The sugar will draw the juice out of the fruit.
- Press the fruit through a fine mesh strainer or cheesecloth, extracting as much liquid as possible.
- Discard the solids.
- Stir in the prosecco vinegar.
- Refrigerate for another 24 to 48 hours to allow the flavors to meld.
- Store in a sealed jar or bottle in the refrigerator.
The Gilded Rose Mocktail
Ingredients
Makes 1 serving
- 1 oz strawberry shrub
- 4 oz sparkling water
- 2 oz sparkling elderflower and rose lemonade
- Ice
- Fresh strawberry slices, for garnish
Instructions
- Fill a wine glass or stemless glass with ice.
- Add the strawberry shrub.
- Top with sparkling water and sparkling elderflower rose lemonade.
- Stir gently.
- Garnish with fresh strawberry slices.
This light, sweet, and tart drink is a refreshing crowd-pleaser and a beautiful way to celebrate strawberry season before it comes to a close.
